Changing Map Generation?

So, I could hand craft maps to my specific desires before each game. But I'm a big fan of automation (Read as 'Lazy')

 

I'm curious, is there any way to alter the way the game generates maps so Immense maps are larger and/or have more stars/worlds?

No, map generation is hardcoded.

However, you could use the map editor to pre-place everything for you (click on Edit, and then Randomize All), and then manually edit the map the way you want (add more stars, planets, resources, etc.). This would save you a lot of time.
