I was wondering,

Can a ship gain experience and level up during a battle?

And is it possible for a ship level up more than one levels after a battle?

No and yes, in that order: a ship cannot level up mid-battle, but it can gain more than one level after a battle ends, though I don't know the exact details on how experience works.
