Laziness Breeds Improvisation

I had planned on riding the bent to the grocery some time today. The food supplies I bought when I got home from the road are running low and I knew I needed to get enough to last three or four more days.

Somehow the day just sort of drifted by and before I knew it the clock, and my stomach, indicated that it was getting close to dinner time. Hmmm, what to prepare for dinner?

I had finished off the last of the turkey breast and Swiss cheese for lunch.  Check the fridge; 3/4 of a pound of lean ground beef, some condiments, and a few bottles of beer.

Check the cabinets. Some rice, a few cans containing black beans, chick peas, green beans, and corn. Ok, I can do something with this stuff. But what?

I put some rice on to cook. While it was cooking I made up a sauce of ketchup, water, a good dose of red pepper, a little cumin, and some salt. I browned the burger, added the improved sauce, and the rice, a can of black beans,, and simmered that mess for a while.

I really didn't expect much more than something to fill the stomach but as bad as it may sound it was actually pretty tasty. I guess red pepper can help out just about anything LOL

I'll be riding to the grocery after breakfast tomorrow.

Sounds pretty good. I'm gonna pan fry up some skinless chicken breast with a little garlic and serve it up on a bed of whole grain rice with some sauteed spinach leaf and a little onion from Dad's garden on the side...

LOL. Hmm, sounds yummy y'all!  I did a whole baked chicken today with some veggies and just plain rice.  Usually I would do more but I was baby sitting twins and their brother this afternoon (my neighbor's kids...they were painting and to get them out of the fumes)! 

 

BTW, I made some guacomole for the first time tonight and am taking it to work to let them try it out.  My kids and hubby are totally lost on the taste of guacomole, they prefer the avocado the way we eat it back home, just sliced.

Being only 2 of us most of the time, my wife does the same thing - improvise.  Almost always with great results.

That mix sounds similar to one of my favorite meals. We call it "Hamburger in salsa" or "Burgers in sauce" in English. It's almost the same as meatballs in spaguetti sauce except the sauce is very basic (lacking some of the basic spaguetti sauce ingredients) and just ground beef in the form of burger pattie's lacking the ingredients of meatballs. One of my fav dishes over some white rice.
