Despite the fact that I'm a minister, I love the look and feel of Stardock products. My concern is that nobody does a dock icon for bible software and such. Anybody like to tell me how to create my own?

You can use a variety of software. Photoshop, PaintShop Pro, Paint.NET, etc. to create your own. I would recommend the size be at least 128x128, even 256x256.
