What are the easiest and hardest AI/Race configurations for single player?

I've had the game for a week, and I've had a chance to play a couple rounds against different random opponents.  I'm trying to knock out the accomplishments of beating 2, 3, & 4 Hard oppenents single-handedly, then more opponents if possible.  What do you think the easiest opponent configurations would be?  I tried a round yesterday against a couple economist AI Advent opponents, and it was pretty tame.  Has anyone found researcher/defender/etc to be easier?  Likewise, which ones prove to be the hardest?

Economist TEC, Researcher Vasari/Advent should be pretty tough.

For a real challenge, log onto Ironclad Online and play the game in online multiplayer against real human opponents.

Yup, multiplayer sure is challenging. What with dodging minidumps, fiddling with your router, searching for allies who aren't worthless, dealing with people who drop at the first sign of trouble or go AFK randomly halfway through the game, and of course the inability to pause, speed the game up, or realistically save (yeah you can but good luck getting everyone back together to load it) I'm surprised anyone manages at all.

Of course that has nothing to do with the original post at all so I don't know why you bothered.

Anyway I find economist (I think) to be the easiest. If that's the one I'm thinking of they tend to spam lots and lots of light frigates which are easy to counter.

Defender might be easy too, though I can't say I've ever picked it so I don't know for sure. Assuming that means they use most of their ships defending, they will have less to attack with and that could be useful when going up against multiple enemies. That's just theory though.

The most easy game you'll get if you _lock_ teams, each AI in its own team. If you unlock teams, with current diplomacy "model" you'll sooner or later find yourself fighting most AIs, as they'll "sign a NAP" among themself, but will be constantly turning hostile to you, because you'll not be able to fulfill their missions, or because you're destroying ships they've sent to attack you. :( :(
