Mmmmmmmm Chili

Earlier I hopped on the bent and rode to the grocery store to pick up some supplies for the next few days. While wandering the store I was trying to decide what I wanted to cook for tonight's dinner. I wandered down an aisle and without even really making a decision starting putting tomato sauce, tomato paste, and a few other items in the cart and then suddenly decided to make some chili as I hadn't made any in a while.

I do love a good chili, and am especially fond of my own. I make it the way that I like it. I like a chili that has a really good, rich, complex flavor and that is hot enough to make your forehead sweat when you eat it. Some people just dump a bunch of chili powder into a pot with some beans, meat, and tomato sauce and call that chili. Yuck.

I don't give up my chili recipe, but suffice it to say that there are several different kinds of peppers involved as well as several other spices that go along with all of the other ingredients. I have received many compliments on my chili over the years. People really seem to like it. I know I do.

It's all on the stove now simmering away and starting to smell really good. I'm really looking forward to dinner. I'm especially looking forward to lunch tomorrow as the chili is always even better after it's sat in the fridge over night.

Gosh imagining it to be really good.

I love hot foods and I know what you are talking about. In SE Asia, most of us like our foods hot and spicy. We use a different variety of the pepper family from what you use in the West and they can be just as lethal.

They do make everything all the more appetizing!

:LOL: Last night and it was good. I did get a little carried away with the peppers and the stuff is amazingly hot. But I like it that way so it's all good.

Looking forward to lunch today, it should be even hotter after sitting in the fridge over night. :D

Do you eat it with chips? Just curious.

I am not much of a spicy person. What I consider very hot or spicy my wife thinks its mild and adds more. I'm sure she would love your chili. I love chili and am working on creating my own style as well.

I don't understand, though, why you don't like sharing the recipe. I sure you like the fact that its unique for you and chances are someone out there may try to commercialize it in some way or something, but personally, I think its cool to share personal recipes with others. You never know what you might come across while sharing. But that's just me. If you ever do consider sharing someday, please keep me in mind. I have a mean BBQ ribs recipe you might like.

I just throw some chili powder into a pot with some tomatoes and kidney beans, and meat... but I'm following a Betty Crocker recipe! And my wife doesn't like the spicy stuff.

I'm with ya MasonM. I do love a GOOD chili.

My problem is I had an AWESOME recipe that many just loved but didn't make it for a long time. Now it's just not the same. :SNIFF!:

I'm pretty fond of navy beans and pinto beans myself but don't make them all that often. I like them with sweet cornbread.

Well, the problem is I lost my base recipe. I remember the modifications I did but I can't find the recipe anymore.

Oh well, it's summer time and my wife makes some yummy Kyrgyz and Russian foods! You don't have to worry about me going hungry. hehe ;)

Exactly. Not only do I not share my recipe, I even have my wife and kids leave the kitchen for the addition of some key ingredients. I may pass it on to the kids at some point in time, but there's something sacred about a man's chili recipe, IMO.

I'm like LW. I make it up as I go so repeating it is kinda hard. I do, however, like making my moms food and I have gotten pretty good at it. Nothing like eating moms food, next best thing is to make it yourself and I sure do come close. Hell, even my wife can imitate her food from time to time. One of these days my mom is gonna tell me "is that all I'm good for?" or "is this the only reason you have to talk to your mother?". LOL

Well now I had to go and try to find my recipes that I use when I make chili.  Right now can only find 1 of three, but I know the others are around here somewhere. 

I think Chili is whatever one makes of it.  I heard a few weeks back that a good chili doesn't have any beans.  All that chilis I've ever had have had beans, lol.  Some people like it spicey, but then again Im a panzy and can't handle hot stuff. 

I have three recipes...won't share them here, lol...but each one is unique.

1.  My dads "2nd Place Chili" he entered this in the county fair up in MN about 15ish so years ago and won second place.  They said he would have won first place if only it were spicier.  However, he felt that as a family dish, it shouldnt be spicey because not everyone likes to spicey foods. His involves meat, beans, canned tomaters, some spices and a bay leaf...simmer for a while and everything blends together perfectly.

2.  Joes Chili.  This is my grandfathers recipe and the one I found.  It is a bit meatier, has more spices and veggies added (usual chili veggies of course)...some chili kidney beans, accent, soy sauce (yeah I know, lol)...and a can of beer. Slow cool for a while and whammo.

3.  Black bean chili.  Id share this one as I think it came out of a magazine.  My dad gave it to me and its fairly simple even though I dont have it memorized yet.  Meat, two cans of black beans...one mashed.  etc.

4.  I just remembered this one while browsing my email looking for the recipes.  Its called Michelles Blonde Chicken Chili and while I would assume its even harasy (sp) to call it a chili...it is very good nonetheless.  Its a recipe on allrecipes.com and involves chicken breasts, chicken broth, chili peppers a bunch of northern beans and other items and it is very good.  Nice alternative to the regular beef chili.
